Like the avocado melt, this sandwich doesn’t use meat as the star. The arugula and sprouts star in the sandwich and the prosciutto simply adds to that. The greens provide some bite and bold flavor and the ham adds some needed salt and gives you that hint of meat that makes you feel satisfied. This is a perfect sandwich to make after the avocado melts because you can use up the remaining sprouts.
This sandwich was very cooperative with being photographed. I especially enjoy the last photo (at the bottom of the post) where it looks like the sandwich is trying to cover its face to keep it from being photographed like some Hollywood starlet coming out of a sleazy club.
Prosciutto with Sprouts and Greens - Recipe
There really isn’t a lot to this recipe since it’s a very simple sandwich. Prosciutto Parma is the authentic stuff from Italy and is amazing so try and find it if you can. Regular prosciutto will work in this too, so don’t worry too much if you can’t find Parma.
Servers 2
2 Ciabatta rolls
4 slices Prosciutto (Parma if you can find it)
Handful of Sprouts – a spicy variety works best
Handful of Arugula
Mayo
Slice and lightly toast the ciabatta. Spread a thin layer of mayo on the bread and then layer the prosciutto, sprouts and arugula over.
